Mango Cabbage Slaw

This recipe is one of my new favorites because it’s so simple, gut healthy, and delicious! It’s pretty versatile too and would be great with green cabbage and avocado. 4 Servings (side dish)

Ingredients:

  • 1 mango, peeled and thinly sliced

  • 1/4 head of red cabbage, very thinly sliced

  • 2 scallions, thinly sliced

  • 1 tbsp sesame seeds

Dressing:

  • 1/4 cup rice vinegar (can substitute with whatever vinegar you like)

  • 1/4 cup olive oil or avocado oil

  • 1 lime, juiced

  • 2 tsp soy sauce

  • 1 tsp hot sauce, I used Yellow Bird mango habanero

Clean the cabbage by removing the first few layers and thinly slice it, combine with the sliced mango and scallions. Whisk all of the dressing ingredients and toss before serving. Top with sesame seeds and more scallions. This would be really good with grated ginger and garlic but I just kept it extra simple this time. Enjoy!
